Red velvet cupcakes

Sorry for have been gone for all winter and spring.
Just in the mode of " don't want to do anything" AKA " lazy"
Today I have the delicious cake that I would like to share.
I got the recipe from  Martha Stewart website which is I will keep for the rest of my life!!



Red Velvet Cupcakes

make 24 cupcakes

2 1/2 c cake flour
2 tbs cocao powder (don't used special dark , it will fade the red color and become dark)
1 1/2 c granulated sugar
1 1/2 vegetable oil
1 tsp salt
1 tsp vanilla extract
1 c buttermilk
1/2 tsp red gel color
2 tsp vinegar
1 1/2 tsp baking soda

preheat oven 350F line the 24 paper mold on the tray

sift together flour cocao powder and salt set aside

vegetable oil and granulated sugar in the mixing bowl beat until blend

add egg one at a time ,beat until cooperated

mix in gel color and vanilla

add flour mixture alternated with buttermilk strat with flour end with flour ,mix well after each

in a asmall bowl mix the vinegar and baking soda stir and add to the cake batter stir well

devied the cake batter among to paper molds about 2/3 - 3/4

bake 20 minutes until the cake taster insert into the center and come out clean

tranfer to wire rack to cool


for the creamcheese frosting

1 cup unsalt butter soft, room temperature
12 oz creamcheese soft, room temperature
3-4 c icing sugar sifted
1 tsp vanill extract

beat butter and creamcheese with a mixer until fluffy

add sugar one cup at a time and add vanill mix until smooth
